For those who aren`t familiar, let us rewind and introduce you to @Longcroftandold who supply all of our beef. Like us, they`re passionate about meat. From beautiful marbling to high quality cuts, the team pride themselves in supplying to leading butchers and restaurants within the UK
One of the reasons we chose to work with the team was for their expertise in dry-ageing, which makes its way onto our menu in the form of a 10oz Sirloin served with bone marrow, herb crumb, fries, peppercorn or Béarnaise sauce. Through a very carefully controlled setting considering humidity (set to 85%), temperature (0-1 degrees celsius), airflow, UV lighting and high quality beef, we get a beautiful result in texture and flavour
It`s pretty clear why they`re one of the frontrunners in the field and we`re pleased to share with you produce to plate.
